1. Vegan Chocolate Coconut Slice

This delicious vegan dessert will please any sweet tooth out there. No sugar, no dairy, and is suitable for anyone on a vegan diet. It’s easy to make and contains no artificial flavors or preservatives.

Simply blend all the ingredients, place in the fridge for 30 minutes, and then cut into squares to serve!

Ingredients

  • 2 cups cashew nuts (Kaju)
  • ¾ cup desiccated coconut
  • ¾ cup cacao powder
  • 5 tablespoons honey
  • ½ teaspoon vanilla extract
  • ½ cup coconut oil
  • ¾ cup water

Recipe Instructions:

  • Place the cashews in a food processor and blend until they are a fine meal.
  • Add the desiccated coconut, cacao powder, agave syrup, and vanilla to the food processor and process until the mixture is smooth.
  • Stir in the coconut oil and water and mix well.
  • Pour the mixture onto the prepared baking dish and place in the freezer for 30 minutes until set.
  • And, your Vegan Chocolate Coconut slice is ready to savour.

2. Kiwi Fruit Cheesecake

No refined sugar in this refreshing and delicious dessert made with just fruit and oats.

The kiwi fruit gives this dish an extra zing making it the perfect dish for anyone following a health-conscious diet.

Make up the base in advance and assemble it when ready to serve.

Ingredients:

  • 2 kiwis, peeled
  • 1/2 cup Powdered sugar
  • 4 tbsp Sugar
  • 1 tsp Vanilla essence
  • 12 tsp Graham oats
  • 1 tsp Butter
  • 1/2 lb Cream cheese
  • 1 cup Heavy whipping cream1 tbsp Gelatin
  • 1/4 cup Water

Recipe Instructions:

  • Peel the kiwis and slice them to process in a smooth paste.
  • Add the powdered sugar, vanilla essence, and sugar to the kiwi mixture until well combined.
  • Tip the mixture into a bowl and add the graham oats and butter and mix well. Divide the mixture evenly between four ramekins (a small dish for baking) or serving dishes and press down with the back of a spoon to form an even layer.
  • Cover the ramekins with cling film and refrigerate for at least one hour.
    Then reheat the oven to 375 degrees F and remove the lid from the ramekins.
  • Place the cream cheese, cream, gelatin, and water in a medium saucepan and heat until the cream cheese has melted and the ingredients have combined.
  • Remove from the heat and pour over the base in the ramekins.
  • Place in the oven and bake for 15 to 20 minutes or until the filling has set.
  • Allow sitting at room temperature for 5 minutes before serving.
  • This delicious treat is best served cold with a drizzle of honey over the top.

  • 1 cup dates / khajoor (pitted)
  • 1 cup hot water
  • 1 cup cashew / Kaju
  • 1 cup almonds/badam
  • ½ cup walnut / akhrot
  • ¼ cup pistachios/Pista
  • ¼ cup sesame seeds / til
  • ¼ cup pumpkin seeds
  • ½ cup dry coconut (grated)
  • ½ cup honey
  • ½ tsp cardamom powder
  • ¼ tsp salt
  • ½ cup rolled oats

Recipe Instructions:

  • Firstly, soak 1 cup of dates in 1 cup hot water for 2 hours and blend to a smooth thick paste.
  • In a Kadai, take 1 cup cashew, 1 cup almonds, ½ cup walnut, ¼ cup pistachios, ¼ cup sesame seeds, and ¼ cup pumpkin seeds and roast on low flame for 5 min.
  • Now it’s time to roast ½ cup dry coconut transfer the roasted nuts to a dish and keep aside.
  • Saute dates and paste them on medium flame until they thicken.
  • Adding roasted nuts, half a cup honey, ½ tsp cardamom powder, and little tsp salt.
  • Turn the flame off and make sure everything is combined well.
  • Further roast ½ cup rolled oats on medium flame, then blend to a fine powder.
  • Add oats powder to the dry fruit dates mixture, combine well, and keep mixing until the mixture thickens.
  • Transfer the prepared mixture to a greased plate to set well, forming a block for 1 hour.
  • Finally cut the mixture into small squares with a knife. Store in refrigerator for up to 3 weeks.

In India, we have a variety of kheers that vary in flavour and ingredients. One of the most popular and delicious is Carrot Kheer. It is made during festivals mostly.

This is a popular dessert served in Indian restaurants and at family celebrations. To make a delicious and easy version of this traditional dessert, follow these simple steps:

Ingredients:

  • 1 + 1/2 cup Carrots – finely chopped
  • 20 Almonds
  • 3 cups Milk
  • 3 tbsp Condensed milk
  • 1/2 cup Sugar
  • 1/4 tsp Cardamom powder
  • Sliced Almonds – few for garnish
  • Saffron – Pinch

Recipe Instructions:

  • Take a pressure cooker, add finely chopped carrots, almonds, and 1 cup of milk, cook for 3 whistles and switch off.
  • Then blend them into a fine puree after reaching room temperature, add the carrot puree to a saucepan on medium flame and remaining milk, let them boil for 15 minutes, and stir well in between
  • Add condensed milk, and saffron; Boil for 5 minutes, stir well in between
  • Furthermore add sugar, cook for 2-3 minutes or till it is dissolved.
  • Garnish with some sliced almonds.
  • Serve hot or cold according to your choice.

Kalakand/Milk Cake is a popular sweet dish in northern India. It is a rich and delicious cake made of milk, sugar, and clarified butter.

The cake is usually flavoured with cardamom, cloves, or cinnamon and served cold or at room temperature.
It is usually cut into diamond shapes as it looks very attractive. It tastes amazing and has a wonderful texture.

Ingredients:

  • 15 ounces whole milk cheese/ milk paneer
  • 1 cup sugar approx.
  • ⅓ cup water approx.
  • ½ cup ghee 4 oz
  • 2 ½ cups dry milk powder approx.
  • 1 teaspoon freshly ground cardamom*/ Ilachi
  • 1 tablespoon chopped pistachios/ Pista

Recipe Instructions:

  • Include the cheese, sugar, and water in the pot and blend well.
  • Secure the cover, near the weight valve, and cook for 11 minutes (Typically a great time to crush cardamom in case you don’t have a few on hand).
  • Add ghee, drain milk powder, and cardamom to the pot and blend until well combined
  • Pour the mixture into a square container, sprinkle chopped pistachios over best, and after that tenderly shake the skillet to assist level the fudge.
  • Let the cake cool down then put it in the fridge for 3 hours to set.
  • Once chilled, cut into squares.
  • For approximately a week, you can store this mithai in an air-tight holder within the ice chest.

5 Healthy Home Remedies for this Winter

Winters ring with joy and celebrations every year. Children learn a lot during this time of year because they are so interested in the weather.

Though joy is the key to making winters more enjoyable, catching colds makes it a little tedious and irritable for parents. So far, nothing beats cozy, fun-filled evenings so far if immunity is kept in check.

So, no matter if it is about improving immunity or treating common flu or health issues among kids, winter home remedies or recipes can do wonders.

Sore Throat

Sore throats are the most common winter complaint, and they are caused by bacteria and dry weather. It can be unpleasant due to irritation and itchiness. The worst ones can sometimes cause pain while swallowing food. For decades, gargles have been the best solution for this problem.

Boil the ingredients in water for five minutes. Once lukewarm, gargle with it three to four times.

TIP: If your child is too small to gargle, you can simply boil half a tablespoon of cinnamon powder or a small cinnamon stick in water for 5 minutes, strain, and keep it aside to be lukewarm. Add some honey and let your kid drink it or be spoonfed it.

Cold and Cough

Cold and cough is another painful set of flu issues that children commonly catch despite taking numerous precautions, most likely due to their less-developed immune systems. Even though it’s not a good idea to take medicine too often, most seasonal illnesses can be treated at home with simple, effective remedies that don’t have any side effects.

Saute 1 finely sliced onion, 2 cloves, garlic in olive oil. Add pumpkin, ½ tsp salt, and ½ tsp pepper until it changes color (slightly). Further, add 2 cups of water and cook. Blend to make a smooth paste.

Serve hot pumpkin soup sprinkled with black pepper.

Whether we want it to or not, winter is upon us and will last until February. We must take the same care to stay warm in the winter months as in the summer.

Adults have greater immunity and, therefore, can endure colds more easily than children. Throughout this season, children are more prone to colds and viral infections.

Common cold and flu-like symptoms include sneezing, hacking, sniffing, and coughing. To keep your child from getting sick, you should take a few precautions. 

As part of these preparations, you should do more than just wear extra thermals. You should also make some permanent changes to your lifestyle to avoid problems during the winter. 

As a mother, we are always concerned about what adjustments we need to make in our lifestyle to go hand in hand with season change for our children. 

Here is a list of things and some extras that our children need to keep them safe from harsh winters, especially after COVID-19 and other diseases that could be hiding in the environment. 

  • Keep Your Child’s Skin Safe

Cold weather and low humidity can dehydrate the skin. Encourage kids to take a warm (not hot) bath every other day for five to ten minutes to soak up as much moisture as they can. 

Rather than bubble baths and perfumed soaps, use moderate cleansers. If your child’s skin is particularly dry or sensitive, mix in some Soothing Bath Treatment.

  • Remember to Stay Hydrated

Kids work up a sweat when playing in all that gear, so make sure they take a water break every two hours and help them rehydrate and refuel when they come inside.

Water is usually the best option, but if you want to spice things up, serve it heated with mint, lemon, apples, oranges, or berries. Put it in a thermos so they can drink it outside.

Herbal teas aren’t exclusively for the elderly. Children like to drink chamomile, ginger, or golden milk tea, which is made with warming spices like turmeric, cinnamon, ginger, and black pepper.

Make a new hot chocolate with half a cup of warm water. Add one or maybe more extras, such as honey, cinnamon sticks, vanilla extract, or small marshmallows.

  • Flu Vaccination

Getting vaccinated is essential, especially in this day and age when new viral illnesses pop up every day. 

For kids, it’s better to be cautious than sorry. Get them a flu shot to keep them from becoming sick. 

Although immunization cannot cure the cold virus, it can lessen the chances of getting the flu.

  • Increase your eczema treatment

Once or twice a day, and after a bath, apply a neutral moisturiser. Moisturizing lotion ointments are the most effective against eczema. 

Wool and other scratchy shirts and sweaters should be avoided.

  • Wash hands frequently

The most contagious sites for the virus to spread are the hands. So, it’s important for kids to wash their hands often to avoid getting colds and other infections. 

Another key aspect is that in cold weather, children tend to avoid water and washing their hands because it is cold, but they also touch too many objects. 

As a result, it is critical that kids clean their hands regularly so that they will not develop a cold.

  • Alcohol-based hand sanitiser

Standard hand sanitisers are incapable of completely eliminating germs. It is critical to utilize alcohol-based hand sanitisers that give superior protection.

This is also useful because there are instances when you cannot wash your hands or soap is not available, so it becomes necessary to avoid to prevent from the cold during the winter season.

Put a tiny bottle of hand sanitiser in your child’s bag as well, and make sure it’s gel-based. Gel-based sanitisers may be safer for youngsters to use because they do not splash into sensitive parts like the eyes.

Before going outside, put petroleum jelly or a moisturizer on any exposed parts of your face to keep them from getting chapped. Apply it under masks as well; inhaling can cause the skin to get moist and chafed.

Keep your hands dry

Wet mittens dry the skin, and if they’re also cold, this can result in cracked fingers. Change gloves as needed, then apply moisturizers as soon as possible.
